Healthy Granola

Ingredients - makes about 6 cups

  • 4 cups Rolled Oats
  • 1 cup Slivered Almonds
  • 1/4 cup Chia Seeds
  • 2 tsp Ground Cinnamon
  • 1 tsp Fine Sea Salt
  • 1/2 cup Melted Coconut Oil
  • 1/3 cup Honey or Maple Syrup
  • 2 tsp Vanilla Extract
  • 2/3 Unsweetened Coconut Flakes or 1/2 cup Shredded Coconut
  • 1/2 cup Chopped Dried Fruit or semisweet Chocolate Chips

 

Preheat oven to around 180 degrees.

In a large mixing bowl add oats, almonds, chia seeds, cinnamon and salt,  stir until really well combined.

In a separate bowl, add the coconut oil, honey and vanilla extract and stir until combined. Pour over the oat mixture and keep stirring until evenly combined.

Spread the granola out evenly on your tray and bake for around 10 minutes.  Remove from the oven and mix well and spread back out and bake for another 10 minutes.  Remove from the oven again and add the coconut, giving it a good stir and bake in the oven for another 5 minutes until lightly toasted and golden.

Remove the tray from the oven and pop onto a wire rack letting the granola cool down to room temperature.  Stir in your dried fruit or chocolate chips and mix well.

Serve immediately or store in an air tight container for around one month.

Notes

Go crazy with substituting - swap in different seeds and dried fruits.
